Afghanistan Eid lunch step by step
- Soak rice in enough water for 45 mins..
- Cook rice for 20 mins..
- Meanwhile, heat 1 tbsp coconut oil and add garlic..
- When garlic is lightly browned, add carrots. Stir occasionally..
- When carrots start to change colour, add in raisins and cook for five minutes..
- When rice is done, strain and return to pot with a low fire underneath to cook out excess moisture..
- Add in elaichee, geera and salt and mix well..
- Add in carrots and raisins and mix well..
- Peel eggplants and cut in half. Slice each half into thin slices 1/4 inch thick..
- Fry slices or bake until brown. Do not over cook or middle will become too soft..
- Heat 1 tbsp oil in pan and add in garlic..
- When garlic is light brown, add in tomatoes, tumeric and cayenne pepper and cook for 6 mins until soft and mushy..
- Add in fried or baked eggplant and 1/4 cup water, cover and cook on low heat for 10 mins..
- Serve with yogurt on top..
